Cookbook Counters Reflux with Low-Fat, Low-Acid Fare

A new cookbook aims to soothe reflux sufferers with low-fat, low-acid recipes.

Jamie Koufman, MD, the founder and director of the Voice Institute of New York, has investigated the effects of acid reflux on the voice and breathing passages for almost three decades. Now, she has published Dropping Acid: The Reflux Diet Cookbook & Cure, which aims to help sufferers beat reflux with a low-fat, low-acid diet. Koufman’s co-authors on the book, which includes 75 recipes, are Jordan Stern, MD, an otolaryngologist who is founder and medical director of BlueSleep, a sleep apnea center in New York City, and Michael Bauer, who is master chef at the French Culinary Institute in New York City.
